Place the clarified butter and coconut oil in a large skillet over medium heat.
Spread the chicken tenders across the bottom of the skillet
While the chicken is cooking, mince the garlic and zest about 1/4 teaspoon from each of the citrus fruits.
Juice the orange, lemon and lime and set the juice aside.
Turn the chicken and keep cooking until it is almost cooked through, then add the garlic and zest.
If you like it a little spicy sprinkle the chicken with cayenne pepper and cumin.
Once the chicken is cooked pour in the citrus juice and let the mixture simmer for a couple more minutes before removing from the heat.
Serve topped with the cilantro.
