Grain Free Peppermint Chocolate Mug Cake

Ingredients
  

  • 1 scoop chocolate protein powder I use Left Coast
  • 1 tablespoon coconut flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut sugar or a couple drops of liquid stevia
  • 1/2 teaspoon non aluminum baking powder
  • 1 egg
  • 1/4 cup coconut creamer I use SoDelicious can substitute coconut or another type of milk.
  • 1-2 drops peppermint oil I use Young Living
  • Optional: 1 tablespoon Grain free diary free chocolate chips I use Enjoy Life

Method
 

  1. Grease a small bowl or large mug.
  2. Add the protein powder, coconut flour, cocoa powder, coconut sugar and baking powder, and stir to combine.
  3. Add the egg and mix well.
  4. Add in the creamer and combine all the ingredients.
  5. Add in the chocolate chips and peppermint oil and stir to combine.
  6. Microwave for 2 minutes.
  7. Enjoy!
