Like I said in my Whole30 resource post, I’m participating in the Whole30 program in January (and hopefully beyond). Today was the kickoff day! I’m super excited to make it official, even though I’ve been basically following the plan for the last couple weeks. I’ve looked over the Whole30.com website and I’ve been reading through It Starts With Food: Discover the Whole30 and Change Your Life in Unexpected Ways. I took some measurements and checked my weight this morning, and I’m going to try not to do it again until the end of the 30 days. I compulsively check my weight in the mornings though, so no promises unless I have my husband hide the scales! Hah!
Day 1 Whole30 Breakfast Menu:
- Southwest Egg Scramble topped with Raw Taco Kraut (Gotta get that kraut in for New Year’s Day!)
- Small orange
I made the southwest egg scramble, it’s super easy and takes 20 minutes tops. The raw taco kraut was something new they had at our local farm store the other day so I thought I’d gie it a try. I might have to come up with my own recipe and make this! It was delicious! It has taco spices in it like garlic, cumin and cayenne. It made a wonderful alternative to salsa!
Day 1 Whole30 Lunch Menu:
We got up super late today, since we stayed up late for New Year’s Eve last night. Breakfast was almost at lunch time, so I just basically had a snack for lunch since I knew we were going to have a big dinner.
- 1/4 cup raw cashews
- small apple
- a few kale chips
Day 1 Whole30 Dinner Menu:
- Grilled Lemon and Dill Crusted Salmon (recipe coming tomorrow!) I made a little extra so I’d have some for my breakfast/lunch tomorrow.
- Fresh greens with lemon and olive oil
- Slow baked sweet potato~ bake at 400 degrees Fahrenheit for about 45 minutes to an hour depending on the size of the sweet potato), topped with about a teaspoon of clarified butter. I baked 2 extra for my breakfast and/or lunch tomorrow.
I try to get in at least a 20 minute workout every day, today was a bit hectic with the whole family home and starting the program, so I got in a Zumba Rush 20 minute workout (from their DVD set), did some crunches and free weights for my abs and arms and called it a day!
