Strawberry Rhubarb Crisp Recipe

It’s rhubarb season here in Ohio! I love having the opportunity to eat locally and seasonally, and it doesn’t get any better than rhubarb in May around these parts. I decided some strawberry rhubarb crisp was in order. My strawberries here are still just blooms and little green berries but I couldn’t wait, so I did have to buy some berries to make my crisp this time. The first of June I’ll have some strawberries straight from the garden, and I’ll definitely be making more strawberry rhubarb crisp!

I have a small patch of rhubarb right outside my kitchen door. So I raided it, then got a little more rhubarb from my mom’s garden to go with it. My recipe for strawberry rhubarb crisp doesn’t have any thickeners, I love the juiciness, especially when it’s warm over some homemade ice cream. It’s heaven! So if you’re looking for a thicker crisp you should probably move along to a different recipe, or add some corn starch. Otherwise enjoy the sweet juice!

Strawberry Rhubarb Crisp

Ingredients:

  • 4 cups chopped rhubarb
  • 1 ~ 16 oz container of strawberries~ chopped
  • 3 Tablespoons + 1/2 cup cane sugar
  • 2 cups rolled oats
  • 1/2 cup oil
  • 1/2 teaspoon vanilla

Directions:

1. Chop the strawberries and the rhubarb and place in a 9×13 baking dish.

2. Sprinkle the 3 tablespoons of sugar over top, and stir lightly to mix in.

3. In a medium bowl mix together the rolled oats, oil, 1/2 cup sugar and vanilla until it forms a loose crumble.

4. Pour the rolled oat mixture over the strawberry rhubarb mixture.

5. Bake for 35 to 45 minutes at 350`F or until the crisp is a light golden brown.

You can enjoy warm out of the oven straight up or over ice cream. You can also freeze strawberry rhubarb crisp. I like to make extra this time of year, then freeze individual containers to pull out later for a quick snack or dessert.

It’s great for those nights when my son has a baseball or football game and I don’t have much cooking time! My own version of convenience food.

Berry Hemp Smoothie Recipe

I’m a big smoothie fan! I usually have one every morning for breakfast, even in the winter. Lately I’ve been adding hemp seeds to my morning smoothie, and it gives it a wonderful creamy texture, and adds some Omega 3s, Omega 6s and other great vitamins and minerals to my day.

I did some serious soul searching, and made some serious lifestyle changes last spring, that included cutting out most things processed, and consuming a more natural diet. The smoothies fit in very well with that lifestyle. They are a wonderful way to kick start the morning, so I thought I’d share the recipe here at Home and Garden Cafe.

Berry Hemp Smoothie

Ingredients:

  • 2 Tablespoons shelled hemp seed (I use Nutiva Shelled Hempseed)
  • 1 Tablespoon Hemp powder ( I use Nutiva Organic Hemp Protein Powder)
    (or use one more tablespoon of hemp seed)
  • 2 bananas (peeled)
  • 1 cup frozen strawberries
  • 8 ounces of water (or milk, soy milk, rice milk, almond milk etc)
  • Optional: 1 Tablespoon of honey

Throw everything in the blender and blend until smooth. How easy is that? This makes 2 servings, but I gotta tell you I usually polish off two glasses myself and don’t share!

I don’t usually add the honey, but if you have a sweet tooth, the honey will make everything a little sweeter.

The hemp seeds make this smoothie rich and creamy, so I usually just use water, but you can make it even creamier by using your favorite milk.

The strawberry season here in Ohio is starting to wind down, but you’ll continue to find good deals on strawberries at farmer’s markets and local groceries for several more weeks. Fresh strawberries are sooo yummy! Especially when you add them to one of the dessert ideas above! They’ll be perfect to take to a last minute backyard barbecue, or Fourth of July celebration.

Strawberry Blueberry Yogurt Parfait

One of my favorite healthy summer snacks is a fruit and yogurt parfait. Just like the one you can get at the fast food restaurant (only healthier).

Fruit and yogurt parfaits are super simple to make, and they look elegant enough for a summer brunch. Make them by layering fruit and yogurt into a parfait, or wine glass. Top the parfait off with a few more pieces of fruit and a sprinkle of granola cereal.

My favorite ingredients this time of year are strawberries, raspberries, and blueberries, with organic vanilla yogurt. Chocolate yogurt is yummy too, with the berries.

If it’s not berry season, you could also use bananas, peach slices, or blackberries with your favorite flavor of yogurt. They’re also very yummy in the fall with apple slices, and vanilla yogurt topped with walnuts. You can make individual servings, or layer several layers in a trifle bowl for a summer dessert. Serve the granola on the side, and let your guests create their own.

Strawberry Dessert Idea: Mini Chocolate Strawberry Trifle

I decorate cakes and cupcakes on a regular basis. Whenever I have cake scraps leftover, I usually throw them in a container and store them in the freezer to use later. Sometimes I end up using them in other cakes, sometimes I end up throwing them out after a few weeks.

This time of the year I like to pull them out to make a quick and easy strawberry dessert. I used some of the chocolate cake pieces to make mini trifles, because I love chocolate and strawberries together (can you say heaven).

I have some mini trifle bowls, so I actually made 3 mini trifles, instead of one large trifle. You could layer this in a large trifle bowl if you have one, and take it to a summer party, or layer it in wine, or dessert glasses to serve at a sit down dinner.

Even if you have to bake the cake, this is still a super easy, refreshing summer dessert.

Chocolate Strawberry Trifle

Ingredients:

chocolate syrup

strawberries

fresh whipped cream

I layered in chocolate cake, chocolate syrup, strawberries, then whipped cream. Then I repeated all the layers again.

It’s a delicious way to get your chocolate fix for the day!

Homemade Strawberry Pie Recipe

I love homemade strawberry pie, it definitely tops my list of favorite foods! Especially this time of year, when strawberry season is in full swing, and the berries are plump, juicy, and loaded with flavor.

This strawberry pie recipe has a super easy crust that a friend gave me many years ago. The crust is super rich and flaky. I guarantee you’ll love it from the first bite to the last.


Easy Homemade Strawberry Pie

The Filling:

1 quart of fresh berries, sliced

1/2 cup powdered sugar

1 1/2 tablespoon of cornstarch

1/2 cup sugar

1/4 cup water

Stir 1/2 cup of powdered sugar into 3 cups of sliced berries. Let the mixture stand in the refrigerator for two hours. Blent the remaining cup of berries with 1/4 cup of water, 1 1/2 tablespoons of cornstarch, and 1/2 cup of sugar.

Cook and stir the mixture in a saucepan until the mixture is clear and thickened. Fill a 9″ baked pie crust with whole berries; pour cooled sauce over them. Cool thoroughly and serve with whipped topping.


The Crust:

1 1/2 cup flour

1/2 cup oil

1 teaspoons of salt

2 tablespoons of sugar

2 tablespoons of milk

Mix the ingredients together and pat into a 9″ pie pan. Bake at 400` for 10 minutes, then pour in the filling mixture and chill.

Strawberry Shortcake Recipe

The other day I shared my favorite recipe for Strawberry Rhubarb Crisp. I’m on a strawberry kick lately, they’ve been tasting so good already, and the strawberries in my garden aren’t even ripe yet!

Today I want to share one of my favorite recipes for strawberry shortcake. This is a quick and easy recipe you can bake in a 9×9 baking dish. Then top the shortcake warm out of the oven with fresh strawberries, and a little strawberry sauce. Top it all with fresh whip topping and you’ll have one of the best summer desserts ever!

Strawberry Shortcake Recipe

Ingredients:

3 eggs
1 c sugar
2 c flour
1/2 c milk
1 tbs butter
1 tsp baking powder
1tsp vanilla

Mix all the ingredients together in a medium bowl. Preheat your oven to 350` while you are mixing the ingredients. Bake for 20-25 minutes, or until the cake is a light golden brown on top. Top with fresh strawberries, and whipped cream.

I have a wonderful recipe for strawberry pie. I’ll just have to make one in the next week or two so I can come back and share a photo and the recipe!

Strawberry Rhubarb Crisp

I love the tangy sweet bite of strawberries and rhubarb combined. The rhubarb in my kitchen garden is about ready for me to start snipping some. The strawberries aren’t quite ready yet, they’re just blooming here in Ohio. They did have some fabulous berries at the local grocery the last time I was there, so I had to get some.

Strawberry rhubarb crisp is one of my favorite spring desserts, add in some ice cream and I’m in heaven!

Strawberry rhubarb crisp is a wonderful alternative for strawberry rhubarb pie. There’s still a little sugar, and oil, but there’s plenty of fiber and natural goodness to make up for it.

Here’s my recipe~

Strawberry Rhubarb Crisp Recipe:

  • One quart of fresh strawberries
  • One cup of chopped rhubarb
  • 1/4 cup plus two tablespoons of evaporated cane sugar
  • 1/4 cup canola oil
  • 1/4 cup maple syrup
  • 2 cups of rolled oats
  • cooking spray

Preheat your oven to 325`and spray a 9×9 baking dish with cooking spray. Chop the strawberries and the rhubarb, and place them in the baking dish. Sprinkle 2 tablespoons of sugar over the top.

In another bowl combine the rest of the sugar, the rolled oats, maple syrup and canola oil. When they’re thoroughly mixed pour the mixture over the top of the berries and rhubarb. Bake for about 35-40 minutes, or until the crunch topping is golden brown.

Strawberry rhubarb crunch is wonderful hot out of the oven with a scoop of homemade vanilla ice cream. Yum!

This recipe has quite a bit of juice when you’re done baking it, I love it that way. If you want your crunch a little thicker you can add a tablespoon or two of flour to the strawberry rhubarb mixture before you bake it to thicken it up.

This recipe freezes well. If you have extra berries and rhubarb, you can double or triple the recipe and freeze individual servings in plastic containers. It will be quick and easy to pull out later for a quick dessert.

Drew Brees’ Strawberry Pie

One of my favorite times of the year is strawberry season. I love strawberry pie, strawberry shortcake, strawberry smoothies, and everything else made from fresh strawberries, yum! This time of year the strawberries are loaded with flavor, and by the end of May will be ripening in my backyard garden.

Football star Drew Brees just returned from  a USO tour to visit with the troops. Besides being a famous personality, Drew Brees is a father and family man himself.  He’s teaming up with Walmart to ask families across the country to think about who they would invite if they could save enough money in their Easter shopping to be able to include one more person to dinner.

The best part, is in partnership with Walmart, Drew to share his favorite recipe for Strawberry Pie! What better way is there to stretch your budget and make a fabulous dessert at the same time.

Brees’ Family Strawberry Pie

Ingredients

  • 1 Ready-made pie crust

First Layer of filling

  • 1 Cup Coconut Milk
  • 3 Eggs
  • 1/4 Cup Sugar
  • 1/2 Teaspoon Vanilla Flavoring
  • 1 Tablespoon Cornstarch

Second Layer of Filling

  • 3 Cups Fresh Strawberries, hulled

Third Layer of Filling

  • 1 Cup Fresh Strawberries, smashed or pureed
  • 2 Tablespoons Cornstarch
  • 3/4 Cup water

Directions

  1. In medium saucepan, combine ingredients for first layer. Heat over medium heat until mixture begins to thicken, stirring constantly to avoid curdling. Spread evenly on bottom of pie crust. Allow to cool to room temperature. Arrange fresh whole strawberries, tops down, in even manner on top of first layer. Set aside.
  2. In small saucepan, combine ingredients for third layer. Stir well and cook over medium heat until mixture thickens. Spoon evenly over strawberries and refrigerate for at least two hours to chill. Top with (dairy free) whip cream and serve.

Note: All ingredients can be bought at Walmart for unbeatably low prices.
